Magic Porridge

I always struggle with breakfast. I don't particularly like porridge, fruit doesn't fill me up, and toast with marmite is too carby to have every day. Anyone else feel this way?
I am trying to eat a little better lately; and I always think your day should start with a great breakfast; to set you up, and keep hunger at bay (well, at least till lunchtime!)


The past few weeks, I've been eating this truly nom creation,  and it really is one of the most delicious healthy breakfasts I've ever munched on. Plus, it tastes EPIC. Im not blowing my own trumpet either, it just does. Plus, its dairy free, and is completely natural, so no nasty additives either. Its called Magic Porridge. Because it really does taste magic.

You will need:

A quarter cup of natural oats
Two tablespoons of Chia Seeds
Half a cup of almond milk
A handful of strawberries, cut into little pieces
A tablespoon of nut butter (peanut or almond)
A drizzle of maple syrup
A plastic container 

So, take your oats, chia seeds, and place in to the plastic container. Add the half cup of almond milk, and stir together.  Chop up the strawberries into little pieces, and add those too. Put the lid on the plastic container, and leave in the fridge overnight. 
The next day, you will find the mixture has formulated together; the oats and chia seeds expand with the aid of the almond milk, and the strawberries bob at the top, giving the whole concoction a bit of colour (no, that's not just why they are there!)Then place the whole of the mixture into bowl, and mix in the nut butter. This is quite hard to do, but keep at it!


Drizzle a bit of maple syrup on the top, and voila, ready to consume. The oats give you the essential carbs you need at the start of the day, and the fruit, nut butter and maple syrup adds sweetness. Yes, it does kind of resemble frogspawn, but I guarantee you won't need to eat again until lunchtime. Enjoy!
